There are a lot of questions in this posting. Please don't skip any of

LMS & iTunes on Windows 8.1, media on a NAS mounted as drive X:? How is
your LMS configured to run (start at boot time, start when logging in?)?
Can LMS access the media folder when configured as such (ignoring iTunes)?
Just to be sure: LMS is _not_ running on the NAS, is it?

Disable the artwork scan. It just doesn't work reliably... we should have
dropped it long ago. That said: this has nothing to do with the media not
showing up.

Next time you want to run a scan please enable debugging for plugin.itunes
before doing so. Then provide the scanner.log file.

Scanning iTunes when server/media/iTunes.xml are not on the same system
always has been flaky, but usually can be configured to work anyway.
